What do the ship classes do?

Interceptor = carry, Destroyer = bruiser, Scout = mobile, Sentinel = tank, Artillery = long-range DPS.

Interceptor (fast damage): Seraph, Jackal, Beltane, Rune. The Seraph is the free starter.
Destroyer (well-rounded): Legion, Enforcer, Scarab, Condor.
Scout: Eidolon, Skoll.
Sentinel: Roc, Praetor, Typhon.
Artillery: Orstrog, Vektr.
Support ships (Acolyte, Starrk) have the most utility slots and heal.
Haulers (Achamoth, Mammon, Augr) move cargo.

Good to know

A dev called the Typhon a destroyer on 1 Oct; Beta Patch 1 lists it as a Sentinel. All 20 hulls are also classed as cruisers.
